Zucchini Bars

Bar Ingredients
3/4 cup butter, room temperature
1/2 cup brown sugar
1/2 cup white sugar
2 eggs
1 teaspoon vanilla
1 3/4 cup flour
1/2 teaspoon baking powder
2 cups shredded, unpeeled zucchini
1 cup coconut
3/4 cup walnuts, chopped

Frosting Ingredients
1 1/2 cups powdered sugar
2 1/2 tablespoons milk
1/2 teaspoon cinnamon
1 1/2 tablespoon melted butter
1 teaspoon vanilla

Directions
1. In a mixing bowl, cream butter and sugars. Add eggs and vanilla; beat until combined.
2. In a medium bowl, combine dry ingredients. Add to the creamed mixture and stir until combined.
3. By hand, stir in zucchini, coconut and nuts.
4. Spread dough in a greased 10”x15” sheet pan. Bake at 350º F for 40 minutes.
5. Cool before frosting.
6. In a medium bowl, place all frosting ingredients. Beat until smooth.
7. Spread evenly over the bars.

Yield: 24 bars
